Tempeh Sandwiches

Ingredients

  • 1 CUP APPLE JUICE
  • 1/4 CUP BARBECUE SAUCE
  • 2 TBLS. LIME JUICE
  • 1 TSP. CUMIN
  • 1 TSP. CHILI POWDER
  • 1/2 TSP. SALT
  • 8 OUNCES TEMPEH, CUT IN HALF HORIZONTALLY AND THEN INTO 2-INCH WIDE STRIPES
  • 8 THICK SLICES TOAST
  • 1 LARGE AVACADO,CUT INTO STRIPS
  • 1 TOMATO, SLICED
  • 1 CUP SPROUTS

Directions

Combine apple juice, barbecue sauce, lime juice, and seasoning in a medium saucepan. Add tempeh, bring to a boil, reduce heat, cover, and simmer 20 minutes. Remove from heat, uncover, allow to cool to room temperature in liquid. Lift tempeh from liquid and return pan to heat. Simmer briskly until reduced to thick sauce, 1 to 2 minutes. Cool sauce to room temperature and adjust seasonings. Spread 1 tablespoon sauce each over four slices of toast.  Pile with lettuce, tempeh, avocado, tomato, and sprouts. top off with toast and enjoy immediately.
