Summer Salad with Fresh Basil Dressing
Ingredients
Dressing:
- 1/2 cup finely chopped fresh basil
- 1/4 cup olive oil
- 2 Tbs. fresh lime juice
- 2 Tbs. fresh lemon, squeezed
- 1/4 cup dry white wine
- Salt and freshly ground pepper to taste
Salad:
- 1 small green bell pepper, seeded and cut into julienne strips
- 1 small red bell pepper, seeded and cut into julienne strips
- 1 small carrot, peeled and cut into julienne strips
- 1 small yellow squash, cut into julienne strips
- 4 cups thinly sliced bok choy (about 4 medium stalks)
- 2 cups halved snow peas, blanched and patted dry
- 1 small cucumber, cut into julienne strips
- 6 oz. fresh mesclun greens (about 12 cups)
Directions
Dressing: In small bowl, mix all ingredients until blended. In large serving bowl, toss together all vegetables. Stir dressing and pour over salad; toss to mix and coat.
