Spicy Thai Soup


  • 1 qt. vegetable stock or water
  • 1 tsp. fresh gingerroot, shredded and a few slivers of lime zest
  • 5 cloves garlic
  • 1 lemon grass bulb, cut in 1 inch pieces
  • (or 1/2 tsp. lime zest)
  • 4 shallots, thinly sliced
  • 3 small fresh chili peppers(with seeds), chopped  (more for spicier flavor)
  • 2 tbsp. soy sauce
  • One 15 oz. can straw mushrooms, drained
  • 4 kaffir lime leaves (or 1 tsp. lime zest)
  • 1/8 cup fresh lime juice
  • 1/2 tsp. freshly ground black pepper
  • 1/3 cup chopped fresh cilantro


IN A LARGE POT: bring the stock or water, ginger, garlic, lemon grass or lime zest, shallots, chilies, soy sauce, mushrooms and kaffir lime leaves or zest to a boil. Lower the heat and simmer 15 minutes. Remove the pot from the heat, and add the remaining ingredients. Remove and discard the lemon grass and lime leaves before serving. Serve at once.
