Roasted Beets with Gorgonzola/Walnut Dressing and Arugula

Ingredients

  • 1.5 lb Beets
  • Some Olive Oil
  • Dashes Salt, pepper
  • 1/4 cu Chopped Walnuts
  • 1/4 cu Minced Red onion
  • 1 Tbsp Balsamic vinegar
  • 3 oz Gorgonzola Cheese
  • 1/4 cup Cream or milk
  • Arugula Greens

Directions

Coat beets with 1 tbsp of olive oil, place in roasting pan and cook at 425o F for 40min. until beets are tender.  Remove skins and slice. Toss with 1 tbsp olive oil, 1/4 tsp salt and 1/8 tsp pepper. Sautee walnuts in 2 tbsp olive oil untill browned.  Cool and add red onion, 1 tbsp balsamic vinegar, 1/4 tsp salt. Blend Gorgonzola and cream/milk, add to walnut mix. Serve beets atop small portion of arugula greens, top with gorgonzola/walnut mixture
