Peanut Sesame Noodles
Ingredients
- 16 oz. package linguine
- 1/2 cup salted peanuts
- 2 green onions
- 1/2 cup creamy peanut butter
- 1/3 cup soy sauce
- 1/3 cup salad oil (peanut, canola or safflower)
- 2 tablespoons sesame oil
- 2 tablespoons hot pepper sauce (cayenne or habanero)
- 1 tablespoon sugar
- 1/2 teaspoon crushed red pepper
- Shredded carrots (about a cup)
- optional: other veggies, ie. bean sprouts
- “A Taste of Thai” garlic chili pepper sauce (optional)
Directions
1. Chop peanuts and green onions
2. Mix remainder of ingredients with 1/4 cup hot water
3. Add to drained noodles
4. Serve at cold or at room temperature
