Peanut Sesame Noodles With Tofu Mariname
Ingredients
- 16 oz. package linguine
- 1/2 cup salted peanuts
- 2 green onions
- 1/2 cup creamy peanut butter
- 1/3 cup soy sauce
- 1/3 cup salad oil (peanut, canola or safflower)
- 2 tablespoons sesame oil
- 2 tablespoons hot pepper sauce (cayenne or habanero)
- 1 tablespoon sugar
- 1/2 teaspoon crushed red pepper
- Shredded carrots (about a cup)
- optional: other veggies, ie. bean sprouts
- “A Taste of Thai” garlic chili pepper sauce (optional)
Marinade for Tofu
- 1/2 cup freshly squeezed orange juice
- 2 tablespoons rice vinegar
- 3 tablespoons soy sauce
- 3 tablespoons peanut oil
- 1 teaspoon dark sesame oil
- 2 large garlic cloves, sliced into ovals
- 1 tablespoon chopped fresh ginger
- 1 green onion, white part and half the green, chopped
- Several sprigs fresh cilantro
- 1/2 a small dried red chili, minced (optional)
Directions
Chop peanuts and green onions. Mix remainder of ingredients with 1/4 cup hot water, then add to drained noodles. Serve at cold or at room temperature.
Marinade for Tofu
Combine all the ingredients and whisk to emulsify. Marinate vegtables, tofu, or tempeh for 30 minutes at room temperature, or 1 hour in the refrigerator. al dente. Drain and rinse under cold water.
