Pasta Fagioli Soup


  • 1 large onion, chopped
  • 6 cups vegetable stock
  • 2 cloves garlic, chopped
  • 1 cup diced carrots
  • 1 cup celery, sliced
  • 1 28-ounce can crushed tomatoes
  • 1 teaspoon each, dried oregano and basil
  • 4 ounces pasta(ziti is good)
  • 6 ounces prepared veggie or soy burgers, crumbld
  • salt and pepper
  • chopped parsley
  • parmesan cheese(optional)
  • 1 cup dried navy beans, soaked and cooked


Sauté onion in a large, heavy pot until tender. Add carrots, celery, continue cooking several minutes. Next add the seasoning, stirring to release the flavors, and keep stirring as you add the garlic.  Add the tomatoes, some of the broth, simmer until the vegetables are slightly tender. Add the remaining vegetable stock. Bring to a boil, add pasta and cook until almost tender. Stir in burgers and beans, adjust seasoning. Garnish with parsley and cheese, if desired.
