Cramberry Muffins
Ingredients
- 1 cup cornmeal
- 2 cups whole wheat flour
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- pinch of salt
- 4 ounces tofu (or 2 eggs)
- 1/2 cup maple syrup
- 1/2 cup canola oil
- 3/4 cup water
- 3/4 cup fresh cranberries
Directions
Mix dry ingredients. Use a mixer or a blender to mix wet ingredients. Add wet to dry. Do not over-mix. Add cranberries to batter.
Bake 20 minutes at 375.
