Carrot Cake
Ingredients
- 2c whole wheat flour 2T arrow root
- 2c unbleached flour handful of raisins
- 1T baking powder handful of walnuts
- 1t baking soda 4-5 carrots, grated
- 2t cinnamon 2c maple syrup
- 1t all spice 1c canola oil
- 1t salt 1 1/4c soy milk 2t vanilla
- 1 1/2 lbs of cream cheese
- 1/4c maple syrup
Directions
Mix together all ingredients. Bake at 350o F for 50 minutes.
Icing:
Mix cream cheese with maple syrup.
