Butternut Squash Soup

Ingredients
- 1 large onion, diced
- 4 carrots, chopped
- 1 butternut squash, peeled and chopped
- 6 cups vegetable stock, preferably homemade
- 1/4 to 1/2 cup parsley, chopped
- Ginger
- Nutmeg
- Zest of 1 orange
- Salt, pepper, cayenne
Directions
- In a soup pot, saute onion in olive oil until tender
- Add carrots and butternut squash and cover and simmer for 10 minutes
- Add vegetable stock and cook 20-30 minutes until the squash and carrots are tender
- Add ginger, nutmeg and orange zest
- Blend until smooth and creamy
- Add parsley
- Salt and pepper to taste, and a pinch of cayenne pepper, if desired
