Barley Split Pea Soup
Ingredients
- 1/2 cup split peas
- 1/4 cup barley
- 8 cups water or vegetable stock
- 1 large onion, chopped
- 1 medium carrot, sliced
- 1 stalk celery, chopped
- 1 teaspoon basil
- 4 tablespoons yellow miso
- 1/4 cup chopped parsley
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 large garlic clove, peeled and chopped
Directions
1. Wash the peas and the barley and place them both in a large kettle with the 8 cups of stock. Cover and bring to a boil. Lower the heat and simmer for about 1 hour, or until the peas are tender.
2. Sauté the onion, carrot, celery, and basil until tender. Add to peas.
3. Remove the kettle from the heat. Dissolve the miso in a small amount of the soup, then add with the parsley.
