Carrot Cake

Ingredients

  • 2c whole wheat flour 2T arrow root
  • 2c unbleached flour handful of raisins
  • 1T baking powder handful of walnuts
  • 1t baking soda 4-5 carrots, grated
  • 2t cinnamon 2c maple syrup
  • 1t all spice 1c canola oil
  • 1t salt 1 1/4c soy milk 2t vanilla
  • 1 1/2 lbs of cream cheese
  • 1/4c maple syrup

Directions

Mix together all ingredients. Bake at 350o F for 50 minutes.

Icing:

Mix  cream cheese with  maple syrup.
