QUINOA SALAD WITH DRIED FRUIT AND PINE NUTS

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • pinch salt
  • 3 tablespoons pine nuts
  • 6 dried apricots, finely diced
  • 1/4 cup currants, softened in hot water and squeezed dry
  • 2 tablespoons snipped chives (or 3 small scallions, cut into narrow rounds)
  • 3 tablespoons finely diced yellow or green bell peppers

Vinaigrette

  • Grated zest of one lemon
  • 1 tablespoon lemon juice (or to taste)
  • 3 teaspoons finely chopped cilantro or parsley
  • 1/4 teaspoon paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground coriander
  • salt to taste
  • 4 tablespoons extra virgin olive oil

Directions

Rinse quinoa thoroughly in a bowl of cold water. Then pour quinoa into a fine-meshed strainer and rinse again under running water. In a pan, bring water to a boil, add the salt and stir in the quinoa. Reduce heat, cover pan, and cook for 15 minutes or until done. While the quinoa is cooking, prepare the remaining salad ingredients. Pour cooked grain into a strainer and cool slightly. Place all of the salad ingredients in a large bowl, add quinoa.

To make vinaigrette: In a bowl, stir together all ingredients except oil. Whisk in olive oil slowly. Taste for salt and or lemon juice. Pour dressing over salad and toss. Top with pine nuts.
