Butternut Squash Soup

Ingredients

  • 1 large onion, diced
  • 4 carrots, chopped
  • 1 butternut squash, peeled and chopped
  • 6 cups vegetable stock, preferably homemade
  • 1/4 to 1/2 cup parsley, chopped
  • Ginger
  • Nutmeg
  • Zest of 1 orange
  • Salt, pepper, cayenne

Directions

  1. In a soup pot, saute onion in olive oil until tender
  2. Add carrots and butternut squash and cover and simmer for 10 minutes
  3. Add vegetable stock and cook 20-30 minutes until the squash and carrots are tender
  4. Add ginger, nutmeg and orange zest
  5. Blend until smooth and creamy
  6. Add parsley
  7. Salt and pepper to taste, and a pinch of cayenne pepper, if desired
